Nobo is a place of aspiration:
Where our Chef, his team of cooks, and our service staff aspire to create new experiences and lasting memories for our guests. It is also a place where our guests aspire to experience new pleasures, be surprised and enchanted, and try things they might not try elsewhere. It is this open-minded and open-hearted milieu, this striving on the road to perfection that makes Nobo unique and exciting both for the people that work here, and for the guests that dine with us.

Where our team of cooks and our service staff strive to execute every detail with a sense of mindful awareness and intentionality. Our mindful, intentional way of cooking and serving looks outwardly as well. As the seasons change so does our food—the methods and the ingredients. Guests and cooks alike peer out our large picture windows at our victory garden, observing nature’s slow but inexorable progress, and contemplate the moment in time and what that means for what’s cooking and how to eat it. It is because of this mindfulness and intentionality that both guest and team member grow from the shared experience of nourishing and being nourished.

Nobo is ultimately about enjoyment; a place to have fun. From the sublime and cerebral, to the whimsical and comforting, guests can enjoy an eclectic and progressive cuisine that draws on nature, art, history, and culture for its inspiration. Some foods may provoke thought or evoke emotions; some foods may harken back to the child within us, reminding us of a favorite dish we had at a carnival or in our grandmothers’ kitchen. Whatever the season, whatever the menu, be sure that the Chef and his team want you as the guest to have just as much fun eating the fruits of their labor, as they did cooking for you!
